4 oz pasteurized egg yolk (approx. 7- 8 egg yolks)
½ lb salted butter
1 tbs lemon juice
1 tbs sriracha (amount depends on your taste preference)

Melt butter
Put egg yolks into food processor or blender
Add in lemon juice and sriracha and blend until yolks lighten in color
Slowly stream hot butter into running blender
Taste and check seasoning

Use a sauce pot, or if available, a deep saute or frying pan works best.
Fill with 3-4 inches of water
Bring the water and 1/4 cup of vinegar up to a boil on medium high heat
Crack 4 eggs in individual cups before adding to water
Using a large slotted spoon, carefully stir the water in a circle until you get a “tornado”
At this point quickly drop in each egg individually
Turn the temperature down to medium, as a boil will break up the eggs
Cook for 3-4 minutes
Remove eggs from the water and place on plate until ready to put the benedicts together
1tsp dry ground thyme
1tsp dry ground rosemary
1tsp garlic powder
1tsp onion powder
1tsp guajillo chili powder (you can substitute with a pinch of cayenne powder)
1tsp ground black pepper
1tbs iodized salt

Mix all together
1 lb Yukon Gold Potatoes, cut into 1-1.5 inch chunks
1 sprig rosemary
2 sprigs thyme
3 cloves garlic
1 tbs salt

Put everything in sauce pot and cover with water
Cook on medium heat until boiling
Check potatoes – should be firm but not raw and crunchy
Drain and cool
Remove garlic cloves and herb sprigs
1 small yellow onion, diced
1 red bell pepper, diced
1 sprig rosemary
2 sprig thyme
2 cloves garlic
2tbs olive oil

Salt and pepper to taste
Saute peppers and onions in oil with herb sprigs and garlic on medium heat
Stir frequently – should be soft, but not dark
Season to taste
Remove garlic and herb sprigs
In a saute pan on medium high heat
Heat oil and butter until butter starts to brown
Add potatoes, flipping occasionally until browned
Add seasoning to taste
Add veggie mix and toss together until everything is hot
